Chef’s choice: Berry-licious

It’s natural to crave something sweet and light after a heavy meal. And yes, mousse might be the very thing you’d opt for. But then many think it is not possible to get the right consistency and flavour at home. Don’t worry because Pastry Chef Ram Prasad Sapkota of Radisson has come up with an easy recipe to help you whisk a perfect strawberry mousse at home.
Says Chef Sapkota, “The season of strawberries is here, so it will be easier to get the fruit. The dish can be easily made at home and liked by every age group. Though the dish looks complicated, preparation is not at all a trouble.”
Fresh Strawberry Mousse
You will need
Egg yolk: 5
Sugar: 175 grams
Cream whipped: 650 grams
Gelatine: 20 grams
Fresh Strawberry slice: 100 grams
Strawberry sauce (or puree): 250 ml
Method:
• Beat egg yolk and sugar (50 grams) until light and fluffy.
• In the meantime melt gelatine in cold water and leave until it doubles; then melt it by the double boiling method.
• Beat cream and sugar (125 grams) until firm
• Add gelatine mixture to the egg mixture
• Add strawberry sauce and mix
• Add cream and mix gently
• Pour in to the prepared bowl and set in the refrigerator for two hours or until set.
Serve the mousse garnished with fresh strawberry slices and puree (optional).
