Dashain delicacies

This Dashain Chef Dil Bahadur Budathoki of Dwarika’s Hotel shares his recipes of a typical Nepali delicacy — Khasi ko kebab (Mutton Kebab) which is not only mouth-watering but also easy to prepare.

Khasi Ko Kebab (Serves 4)

Ingredients

•Mutton: 1 kg

•Ginger garlic paste: 150gm

•Chilli powder: 50gm

•Turmeric powder: 50gm

•Cumin powder: 50gm

•Coriander powder: 50gm

•Nutmeg powder: 50gm

•Cinnamon powder: 50gm

•Ghee: 75gm

•Fresh curd: 200ml

•Chopped onions: 100gm

•Mustard oil: 100ml

•Fenugreek seed: 50gm

•Fresh chopped coriander: 20gm

•Salt to taste

Method

• First heat the oil or ghee in a pan then put finely chopped onions. Fry until it turns golden brown.

•Add the mutton and stir it until cooked up to 75 per cent.

•Add all the spices and curd.

•Then cook it on slow heat for 20 to 25 minutes.

• Remove it from flame and garnish it with fresh chopped coriander leaves.
