Strict guidelines for pizza makers
ROME, Italy: Italy has issued strict guidelines to protect the real Napoletana pizza from bogus copies. The regulations touch on everything from size to ingredients to the type of oven.
The rules, issued by the Agriculture Ministry of Italy, are part of Italy’s efforts to protect its cuisine. The guidelines, eight articles, are printed on May 25 in the country’s Official Gazette. The rules and guidelines say that real Napoletana pizza must be round, no more than 35 centimeters (14 inches) in diameter, no thicker than 0.3 centimeters (0.1 inches) in the middle and with a crust of about 2 centimeters (0.8 inches).
