On a cold day as you come back from you office what else can be more comforting than a bowl of hot and delicious soup. So here are two recipes to keep you warm on chilly winter evenings.
Bean and vegetable soup
Ingredients (serves 4)
You will need
â€¢ 1 tablespoon olive oil
â€¢ 1 onion, finely chopped
â€¢ 2 garlic cloves, crushed
â€¢ 400g small chat potatoes, lightly chopped
â€¢ 4 cups salt-reduced vegetable stock
â€¢ 400g can diced tomatoes
â€¢ 2 cups water
â€¢ 2 x 300g cans Soya beans, rinsed, drained (see note)
â€¢ 1 bunch of spinach, trimmed, washed, chopped
â€¢ 1/3 cup continental parsley leaves, chopped
â€¢ Heat oil in a large saucepan over medium heat.
â€¢ Cook onion and garlic for 4 to 5 minutes, or until slightly softened.
â€¢ Add potatoes and cook, tossing, for 1 minute.
â€¢ Add stock, tomatoes and water.
â€¢ Bring to the boil.
â€¢ Reduce heat to medium and simmer, uncovered, for 20 minutes.
â€¢ Stir in Soya beans and cook, uncovered, for a further 5 minutes.
â€¢ Stir in spinach and parsley.
â€¢ Cook for 1 minute, or until spinach wilts.
â€¢ Season with pepper.
