Feasting with king of fruits
Kathmandu:
Get into the spirit of the season with the king of fruits — mango — at The Fun Café, Radisson. After the strawberry festival, Chef Pankaj Mehra has set his sights on the season’s most loved fruit mango and prepared different recipes in his kitchen which will certainly delight the Capital’s foodies and add a different zing to the normal flavours.
Safeda mangoes, available in the local market, has been used in his recipes for the mango bonanza either as a filling or in a cool drink or dessert.
For the teetotalers, the choice range is long. Try something unique with the Mango Rickey, which is great mocktail of mango juice and Coke. In the mood for something creamy? Well, your choice should be the Mango Punch, which is a delicious blend of mango, orange and pineapple juice with cream.
And for those who love the twist of alcohol in their drinks, you could go for Right Time, Mango White, Mango Daiquiri or Fresco mango. All have the flavour of mango with subtle taste of vodka and rum.
Chef Mehra has given a touch of mango to all the main courses.
The grilled chicken breast is great with the meaty chicken taste spiced by the mango chilli salsa that complements the dish with a sharp tang. The filling is of mixed vegetables cooked in a generous amount of butter.
The vegetarians can try a great dish called Ambi Ka Bharwa Bhutta Kabab, which is a corn kabab with spicy mango pickle filling. The sharp sour taste promises to tickle your taste bud.
The Black Olive Icecream — a new offering — is something that all should try.
The Chef’s experiment Fried Mango Ravioli with Brandy Sauce has turned out to be a big success. East meets West in the Chocolate and Rasmalai Terrine with Mango Maple Coulis. The rich taste of chocolate is accentuated with soft and spongy rasmalai layer in the middle. Or you can try homemade mango ice-cream served in tuille cup.
The Mango Festival is on, and all that you need to do is drop in at Radisson for your summer fill.
