Weekend brunch: Sandwich divine

The warm days are here again and here’s a simple but cool egg cucumber sandwich recipe for a quick brunch on a lazy Saturday.

It will take you 15 minutes to make four — just the right number for you and your special someone.

You will need

6 hard-cooked eggs, peeled and diced

1/2 cup cucumber diced

1/2 cup mayonnaise

1 tablespoon lemon juice

1/4 teaspoon salt (or according to taste)

1/8 teaspoon pepper (ground)

8 slices of sandwich bread

Directions

In a mixing bowl, add the eggs, cucumber, mayonnaise, lemon juice, salt, and white pepper and mix together.

Using a tablespoon, place the egg salad on bottom slice of French bread.

Place another slice of bread on top of this.

Using a sharp knife cut bread in half and place on plate.
